Why Is Carversteak a Great Choice for Steak and Lobster in Las Vegas?

Carversteak Las Vegas sets the standard for upscale surf and turf dining on the Strip. Executive Chef Daniel Ontiveros brings a Michelin-starred kitchen background to every plate.

Our curated menu is centered on premium domestic and Japanese A5 Wagyu, alongside standout lobster preparations.

Additionally, our 13,500-square-foot space pairs fine dining with immersive Las Vegas energy, making us an ideal destination, whether you are celebrating a special occasion or simply want an exceptional meal.

What Steak and Lobster Options Are Available on the Menu?

Carversteak offers an extensive selection of seafood pairings for steak, giving every guest something to get excited about.

Lobster

  • Lobster en croute: A two-pound Maine lobster wrapped in puff pastry, finished tableside with a lobster-cognac cream sauce.
  • Grand or petite plateau: Our raw bar tower features Maine lobster, Gulf shrimp, oysters, clams, and PEI mussels.
  • Baby Tristan lobster tail: Available as an add-on steak enhancement when you want to enjoy lobster as part of your meal.

Steaks

  • Miyazaki A5 Wagyu striploin: The traditional Japanese A5, five-ounce, with additional ounces available.
  • CS tomahawk: A 50-ounce Australian Wagyu from Westholme Beef, perfect for sharing or extremely hungry guests.
  • Kansas City strip: An 18-ounce, dry-aged 28-day cut from Flannery Beef.
  • Boneless ribeye: An 18-ounce, wet-aged for 21 days from Midwestern.
  • Filet mignon: An eight-ounce cut from the Allen Brothers of Chicago.

The mild sweetness of lobster pairs especially well with the rich marbling of A5 Wagyu, the buttery consistency of the best filet mignon in town, or the bold, beefy depth of our other premium-cut steaks.

What Makes the Dining Experience Unique?

Carversteak goes above and beyond to create a unique dining experience in ways other steakhouses cannot match, such as:

  • “Choose Your Weapon”: Our signature tableside presentation, where guests select their own premium, artisan steak knife before the meal begins.
  • The Knife Shop: Perfect for private dining and group events, our private dining room is lined with rare blades, custom swords, and collectible knives, some of which are available for purchase.
  • Tableside theater: Tableside presentations to enhance your dining experience, from the lobster en croute’s cognac cream finish to smoke-presented cocktails curated by master mixologist Francesco Lafranconi.
  • 70-foot quartzite bar: Our bar offers its own unique experience, backed by a massive LCD screen projecting dynamic digital art.
  • 3,500-square-foot garden terrace: Our all-seasons outdoor patio with its own bar, dedicated seating, and greenery with unobstructed views of the Strip.
