What Is Authentic Wagyu Beef?

Authentic Wagyu beef must come from Japanese cattle breeds. The four breeds that are considered authentic are:

  • Shorthorn
  • Akaaushi
  • Polled
  • Kruoge

How Can You Tell If Wagyu Is Authentic?

To determine whether Wagyu is authentic, you need to look at the cut. The beef will have intricate fat marbling, with thin white lines throughout. Each type of Wagyu is assigned a grade based on:

  • Firmness and texture
  • Beef color standard
  • Beef marbling score
  • Beef fat standard

It’s the higher fat ratio and marbling that make Wagyu stand out from other cuts. The grade is determined by a letter and a number combination. The letter represents the ratio of meat to weight. Grade A is the best rating and indicates a ratio score of 72% or higher.

Next is the number ranking. These are based on the factors above. The ranking scale ranges from 1 to 5, with 1 being the lowest and 5 the highest.

The top grade ranking for the best Wagyu is A5. Additionally, authentic Wagyu will be accompanied by a certificate. You can ask to see the certificate. Some restaurants will also have a statue on display that indicates they source authentic Wagyu.
